Saehae bog manh-i bad-euseyo !!! Happy New Year !

We hope the Christmas was good for everyone !

We started with our childrens church service on Christmas Eve and enjoyed the rest of the evening opening presents afterwards. It was a LEGO Christmas for Kyler this year as well as other goodies ! I got an annual mom poem and had to look for my presents around the house ! Some nice perfume and a handy dandy new coffee machine ! It was an "Elmo" Christmas for Kijin of course and his first Christmas with us. He loved his toys and stocking stuffers !

Christmas day it was off to Kitchener to see the Marshalls. A wonderful dinner and many gifts ! Thanks to everyone for a great day ! It was all so quick and over before we knew it! Grandad got a poem from us and an unusual gift request from us this year. He can choose to take the CN TOWER EDGE walk !! If not, he can just take in a Marleys hockey game with the boys...we will keep you posted on what he decides !

We had all the Wiersma's over to our place for the first time in awhile on the 27th. Ed and I cooked up a storm and put out enough food to feed everyone for the week ! The cousins enjoyed each others company and mostly played games on their DS's! Kijin loved playing with all the kids ! All of the cousins exchanged wonderful gifts with eachother too. It snowed and it snowed and it snowed ! We hoped everyone had a great Wiersma Christmas!

Our New Year plans we have yet to plan, but it will probably be nice just to stay home, eat all the leftover goodies and enjoy the bottles of wine we got as gifts!

Happy New Year everyone and a Blessed 2012 year !

Moms back to work week

Well I almost survived my first week back to work! WOW those 9 months went fast eh? The week started off with no working stove ! Something went wonky with it as soon as it was finished cleaning ! So we had to think quick, call in a fixup, order in pizza one night, had left overs another night, had take out and then a crockpot dinner ! The stove got working on Wednesday ! Yippee !
Ed is now off , enjoying some time off to shop, do things around the house and take care of Kijin, and Kyler's school drop off/pick up routine ! He is the stay at home dad while I am back to work ! First day--first afternoon nap--guess what happens???? Yep ! Kijin gets out of his crib !!!!!! Ed also had the job of removing Kijin's "Soothie" during nap times, since when he starts daycare January 3rd- he will not beable to have one there......so far so good...except for the one crib escape !!!!!! ( so far.........) Otherwise, work is fine, just a few days of reading a long list of emails, putting my desk back together and a few other things and it;s back to making sure everyone in Durham Region is compliant with the Smoke-Free Ontario Act !
We wish you all a Merry Christmas and happy holidays. Remember, Jesus is the reason for celebrating Christmas Season. Many Blessings to you and to all our family and friends !

Karen's Crock Pot French Toast

Today I had my last "mom" (MOPS) day at our church and decided to make something different for us ladies. Once again, I dug out my crockpot and see what I could make.
Crock pot French Toast it is !
It takes about 4-6 hours to bake in the crockpot, so make sure your timing is right. For me, I had to get up at 3:15am to mix up the batter and turn on the crockpot for it to be ready for 9:00-9:30am ish. I am not aware of any crockpot that has an automatic timer on it. But man, I wished I had it for last night ! But I was told, that its possible to attach an automatic regular light timer to the crockpot and voila ! it will automatically come on or shut off. I have yet to look into this !!!
This is great if you have plans to have company over in the morning or for a brunch.
You will need:
---- 1 whole loaf of bread. ( i used 1/2 of Italian bread and 1/2 raison cin. bread)
-----1 dozen eggs
-----2 tsp Vanilla
-----4 cups of milk ( u can use 3 cups of soy and 1 cup of heavy cream)
----- 1/4 tsp salt ( i did not use salt --)
-----2 tsp cinnamon
---1/4 cup brown sugar
---( optional 1/4 walnuts or other nuts )
Grease down your crock pot very well with butter, shortening or cooking spray. ( if you dont- you will be scraping forever ) Slice the bread into triangles and alternate the breads in the crockpot.
In a large bowl, whisk eggs, milk, brown sugar, salt, cinnamon, and vanilla together. Pour on top of bread. ( optional - is to dunk the bread front and back and then layer it )
Cook over low for 4-6 hours. The bread is done when the break has soaked up all of the liquid and the egg is cooked. The bread will expand.
After 6 hours - i had a bit of liquid left over, so I took the top off for 15 min or longer , the liquid was gone and the french toast was perfect.
If you have a smaller crock pot, scale the back a bit and use perhaps 1/2 loaf of bread !
Yummy !

Christmas chores

Yikes ! Kijin and I have nasty colds this week-sneezing like crazy and just feeling blah ! We are trying to finish up our Christmas chores since my work date back is coming up soon ! Ed will be off and is counting the days down for his 3 weeks off!
This past weekend, we went to a "Korean" Christmas party hosted by the "Korean Canadian Children's Association-KCCA" in Thornhill. It is a special occation put on every year so the families can enjoy and experience the riches of Korean culture and connect with other adoptive families across Ontario. We enjoyed the Christmas service which opened up singing the Korean National Anthem and the Canadian Anthem. All the little ones tried hard to sit through the long service and some of them made it :) Kijin just went up and down the isles , smiling at everyone and picking up things off the ground ( oh joy ). Three other families were "new" to this event besides us and we were announced and introduced at the end of the service !
The Korean dinner was great ! All that hard work and made by volunteers from the church was worth it ! ( Kyler stuck to just eating his white rice --he did not want to try any Korean food ) The bulgogi was amazing !!!!
Santa came around and Ed took Kijin over to see him.......Santa got the "Kijin stare down look" , got his present then wanted out of there ! Kyler got a nice gift too from Santa and played with a few other little Korean boys with balloons around the dinner tables ! Kyler was a "big brother" for awhile playing and watching over the boys while some of the parents talked around the tables :)
Next up is the Korean New Year Celebration in January. We hope to go and check that out as well !
Kyler got his report card last week--and he did a great job ! All "A"s and "B"s. A big sigh of relief when he opened his report card first when he got home ! He is busy working on his book report and boardgame assignment due before the holidays.
My Christmas cards are out, my shopping is done, just the big Christmas tree to decorate !
If you did not get a Christmas card or email from us, let me know--I'll make sure you get one :)

Sorry about the flash spot--but here is a first look at our family photo! I think I matched it us great, with all the blue colours since the boys look great in blue ! Our local Loblaws did it...they only got Kijin to smile for a few photos, but we got a few good shots ! I am happy with them, I think they turned out fantastic and I'll be adding these photos to our new "Family Wall" ! Of course they will be Christmas presents this year !!!

Toblerone Shortbread Cookie Exchange

It's been about 5 years since I have been going to a yearly Cookie Exhange with friends :) ( only the ladies are invited ! ) All ya need is 12 pals who like ( or don't ) like to bake ! Bake your favourite cookies...( or squares, breads, candy etc) bake away until you get 12 dozen, and find neat ways to present them ! This year, I baked my Chocolate Pudding Cookies ( recipe on blog..and they got 3rd place in a bake off!!!) and my famous Toblerone Shortbread cookies. I found these cute paper boxes ( a dollar store find ! ) and added one of my Krafty Karen Krafts ! ( my dad cutted them out, i painted them ) Each person got 6 of my Choc and Toblerone cookies. After an afternoon full of munchies wine and coffee, we each get to take home 12 dozen cookies ! Of course we don't eat them all !!! We freeze them, and take them out when we have company over or give them to neighbours or bring them to Christmas or family events. It's a nice gift too to get a nice little bag of baked goods ! :)

My Krafty dad, likes to make the snowmen every year , paint them and sell them in Kitchener. I got my dad to make me a taller snowman and I painted him myself.

Here is my Toblerone Shortbread Recipe. It's from the KraftWebsite.....

2 cups salted butter, softened

1 cup white fine sugar

3 1/2 cups flour

1/2 cup cornstarch

2 bars ( 100gram each ) Toblerone chopped into small chunks

Beat butter and sugar in large bowl till light and fluffy with a fork. Combine flour and cornstarch and gradually add into butter mixture. Blend with fork or wooden spoon ( or hands ) until well blended. Add the chocolate chunks. ( i break the bars up -put them in a large ziplock bag--and hammer away at them with my kitchen mallet)

What ever size you want- small or big- use your hands and place them on the cookie sheets 1 inch apart-flatten them a bit.

Bake 25 min or so...until golden brown or a bit lighter. It makes about 4 dozen ! Yummy!!!

Good luck ! Enjoy the recipe ! If ya start up a cookie exchange , let me know :)

Kijin enjoying the leaves!

Here is Kijin , 17 months, enjoying a nice November morning with the leaves. He is growing so fast ! Such a little boy now ! My 9 month leave is done in December already :(. Kijin will start daycare in January at a centre in Pickering , the same one Kyler went to many years ago. We hope he adjusts to his new play centre and I'm sure I'm going to miss him and my time off !
He is almost up to date in his needles, doctor visits and I hope he is almost done teething ! UGH ! He will be getting allergy testing though soon, because of milk and yogurt skin reactions he has had in the past. I want to make sure we at least know what to stay away from!
He totally loves ELMO ....he loves books, toys and watching his TV programs. He is a climber though ! He has climbed out of the playpen on grandad and nana's watch and on my watch from his play area ! I am sure this is the beginning of a smart little boy who can climb out of anything !!!! He says a few words now, and he knows what we are talking about most of the time when we ask him, " Go pick up your socks or Elmo or a specific toy". He even makes his "PIG Noises" when he sees a pig ") soooo cute ! He loves to go outside and just pick up leaves, sticks and rocks. I think we have an Adventourous Outdoorsman on our hands!
Ed and I are waiting for his "Adoption Order" to be finalized in the upcoming months. Once that is completed, we can get his documents in order and apply for his Canadianship. So we have some paperwork yet ahead of us, but thankfully , most of it finished !
I only have a short few weeks left of being off with him, so we will make the most of it ! We are getting ready for his first Christmas and getting some of that stuff done first before I head off to work. Ed will be home with both boys over the Christmas holidays with both boys and get Kijin into his daycare schedule for January.
Im off to get my Christmas cards done.....

Karen's Outdoor Greenery Decor for Christmas

I have been doing this on my own for a few years now. It's easy to do and it's free !

You can buy the greenery at your local green houses or grocery stores now...but if you have this stuff in your neighbourhood why not do it yourself?

What I do, is bring my clippers with me on my walks or even a spare set in the car around this time ! Bring a bag or 2 as well.

On your walks in your local park or pathways or even a conservation area ( not from your neighbours plants !!!! ) look for the Red dogwood branches, and all the greenery from different types of pine trees. Clip lots or from here and there.

You may have to do a few trips to get what you need. Using your flower pots ( i save mine with dirt in them every year ) and your favourite garden vase or pot, start to put them in at random, and do your magic. Birch branches are a bonus if you can find them or like me, the guy up the street was cutting up his Birch tree and I snapped up a few free branches ! Then when you are done, start putting in your red dogwood branches. Branches with berries on them are nice too. You can get many things from your dollar store and put in more red, silver, gold, purple stuff or whatever you like. One year I put in bows, and pine cones. Even those lighted up branches would look awesome !

The other one I made, was just lots and lots of dogwood, a birch tree in the middle and voila ! You got another one. You can make hanging baskets too with your leftover greenery.

Karen's Green Picture Wall

I got this idea from my creative friend Kerr, who actually built her own house and has an eye for colours and detail ! In her office, she put up a wall "Tree" transfer that you can buy at Wallmart or HomeSense or wherever. They are a rub stick on....anyways....she put the tree up and put black frames around the tree, creating a "Family Tree" ! So I took her idea ( thanks Kerr ! ) and went with it.

I found green paint , painted the one wall ( yep, and not the whole hall !! ) and knew what I wanted to do. When I shopped in the USA-Bath and Beyond store--and they had this "Tree" Frame idea already in a box ! I bought it, and Ed put it up for me. It turned out great ! Of course we added more frames, planned it out the way it looked the best the wall. The floating shelf underneath the "Family Tree" will have a lamp on it and a few more frames. An easy and creative home project !

Always Remember...

"In Flanders Fields"

In Flanders Fields the poppies blow

Between the crosses row on row,

That mark our place: and in the sky

The larks, still bravely singing, fly

Scarce heard amid the guns below.

We are the Dead. Short days ago

We lived, felt dawn, saw sunset glow,

Loved and were loved, and now we lie

In Flanders Fields.

Take up our quarrel with the foe:

To you from failing hands we throw

the torch; be yours to hold it high.

If we break faith with us who die

We shall not sleep,

though poppies grow

In Flanders Fields.

The pictures above are me. I was in the infantry division of the Royal Highland Fusiliers of Canada Regimental from 1990-1993, out of Cambridge Ontario.

The group picture- I am last standing behind my Master Corporal- in Bordon training Blackdown"C" when I graduated in summer of 1990, Infantry Division.

On each Remembrance Day I remember marching in a Rememberance Day parade in Cambridge wearing my full get up dress gear. What a great feeling to march in a parade on a day like Remembrance Day!

So a shout out to my old Regiment in Cambridge ! Have a great parade and have a beer on me !

Remember to honour the heroes of yesterday and today who gave their lives for our Freedom !

What to do with leftover carved out Pumpkins ! ?

I bought a yummy "Pumpkin Loaf" at a bazzar over the weekend. I loved it soooo much, I ate it all myself and thought, I can make this!!!!
We already got rid of our 2 large pumpkins from Halloween, and we had 3 little weeeeee ones outside still.....ummmmm.....can I do this??
I go on line--read what the instructions on how to boil pumpkin from scratch and find the easiest "Pumpkin Loaf" recipe I could find.
Well ! Those little weeee pumpkins were sooooooo hard to cut into !! I soaked them in hot water for awhile, rinsed them off and I still could not cut it open. Mind you, I only had a steak knife in the house to do this....where was a chain saw or electric knife when I needed it???? So I go on line, and it tells me to Microwave the pumpkin a few minutes then try it again....follow the instructions like you would a large potato ! So in it went- x3 of them......heated them up and then tried cutting it ! Yikes !! It was sooo hard, but a bit easier to cut it open. So I hack away and cut the pumpkin away from its skin and put in in my crockpot. Yep= you can do this ! Who knew? So on high for about 3 hours, a bit of water, I threw in pumpkin spices, and voila ! Cooked pumpkin :) I just have to strain it and prepare to make a pumpkin loaf ( all for me ) LOL---i will see how it turns out---it may even be a good Christmas gift for someone....the Recipe I got makes 2 loafs- I hope I have enough cooked pumpkin and then some left over to freeze, which you can for 6 months.
The results coming up with a Pumpkin Loaf Recipe !

Karens Toasted Pumpkin Seeds Recipe

This pumpkin seed recipe is yummy ! You might as well toast them and eat them since you are carving out a pumpkin or two !! Apparently they have a lot of calories attached to these little seeds.......but who cares ?? LOL
You need:
Pumpkin seeds, Cooking spray, olive oil or butter
Your Fav spices or , salt, garlic powder, onion powder, seasoned salt
Rinse off all your pumpkin seeds. Use your hands to remove all the pulp. Drain pumpkin seeds and make sure they are all cleaned off. Spread them out on a paper towel or on a cookie sheet to dry overnight.
Preheat oven 250- and place non stick foil on your tray.
( i dont do this--i spray my trays with oil and put the seeds on )
Toss pumpkin seeds in olive oil or butter or spray. Sprinkle them with your spices and spread them on the tray.
Bake 1 hour, tossing every 15 or 20min. until golden brown.
Cool them before eating them. Store in container at room temp.
Can do this up to 3 months...or in fridge up to 1 year . ( this is funny...mine last a few weeks or so !!!heheh )
If you like your toasted seeds extra salty, soak overnight in a solution of 1/4 cup salt to 2 cups of water. Dry an additional day, then proceed as above.
Enjoy !!

K and K Transportation !!!

K and K Transportation !!

Kijin is checking out this new way of transportation that Nana and Grandad have at their place ! He loved it ! But would NOT keep his feet up ! He wanted to go go go on his own !!

Kyler was riding his new "Ripstick" skateboard. The men were trying it out as well and not too successful ! LOL ! It's harder than it looks right guys???

My parents live on a small cresent and have been for many many years. The cresent was a great place to play and ride our bikes when we were small. Now its time for the grandkids to do the same whenever we all come over. Its even better in the winter when the snow piles up in the middle and we make forts !!!!!

Thanksgiving Parade !!!

The Kitchener Waterloo Oktoberfest Parade was a great success holiday Monday morning ! Uncle Kolin, Auntie Jenn and Sydney saved a spot for us by the road for a perfect viewing of the parade ! Thanks guys ! The weather was great ! Best day for it ! Missing from my photos are ,Uncle Kolin, Nana, Auntie Jenn, and me who is taking the pictures !!

People come from all over wearing their Oktoberfest hats and costumes to see this parade. It was full of people !

We saw floats, bands, horses, and much much more ! Including my old army group who came to march in the parade, as well as showing off a ML truck and an army tank! Looking good guys !!!

We highly recommend those of you who have never "Oktoberfested" or have not been to one of their parades to do so at least once !!! OI OI OI !!!! The fantastic market and the great shopping at the market and downtown St.Jacobs is worth the drive !!!!!

Hope to see u in Kitchener Waterloo some time !!!

Wiersma Pumpkin Carve Out, Bubble City, Walk on the Beach

It was a busy and fun weekend for us last week.

Kyler's PeeWee Hockey season has started. He is on the Black team this year, hopefully playing forward. Most boys in this league are soooo tall on skates! Yikes-Kyler is in the middle somewhere ! After a hockey practice, it was off to Kitchener to attend Aunt Jenn's Surprise 40th birthday party ! We got her !!! Happy early birthday Aunt Jenn !

Sunday morning was Kyler's first hockey game of the season. Which the team won 4-3. Kyler got his first penalty too ! Oh oh ! It has started ! Then it was off to Wasaga Beach for an early Wiersma Thanksgiving dinner.

The kids and dads helped carve out the small pumpkins grandma bought. They had fun and did a really good job !Then later a hungry and curious squirrel helped himself to Kyler's pumpkin and ate 1/2 of it !

The kids also had fun with the bubbles and made a huge "Bubble City" all over the lawn !

After a great dinner, it was off for a walk on the beach. A bit chilly and windy, but it was nice to get out. Kijin had no problems getting use to the huge backpack we put on Ed to haul him around! He loved it !

Nice to see all of you- Happy early Thanksgiving---thanks for Kyler's birthday presents ! Enjoy your Thanksgiving weekend !

Thursday Thoughts

Wow, September is almost done ! How time flies !
I finished painting the bathroom- so thats off my list ! It turned out pretty good. Not bad for left over paint from the basement ! I'm just on a hunt for a few more things , then it will be finished :)
Kyler had a parent night last week and a sleep over at the school ! How fun is this? It all went well and Kyler was tired when he got home !
Ed and I were able to go to a wedding this past weekend ! Yeah ! Date night # 2 for us since Kijin has been home :) The wedding was great, the weather nice and nice to get out !
On a sad note, my cousins wife passed away over the weekend . She had a long battle with Cancer- but she fought hard for those 2 years and did as much as she could with her family. She leaves behind an 8 year old son, a 5 year old daughter and her husband. We will miss her dearly and thankfully she will be in heaven watching over us and her family. Rest in peace Liz xoxxoxo -
On a happy note, we have completed our 6 month report with Kijin with our agentcy. We now wait for the Adoption Order to go through , then we apply for his Canadianship. He is doing just fine. He is a happy toddler who is always on the go and wants to be outside all the time if he can help it ! Those teeth are coming in like crazy ! He is doing great so far in the church nursery, which makes me feel better , which may be a good transition to daycare in January. :)
We have a very busy upcoming weekend. Hope to have new pictures to post as well !
Happy Thursday everyone !

A Visit to Kitchener

For the last weekend of the summer, we headed off to KitWat to visit Nana and Grandad Marshall and the rest of the family. ( and celebrate Nana's birthday! )

Friday we headed to Nana's school where she works where she was well underway getting those class lists out ! We met her boss principal, vice-principal and a few teachers. Kyler enjoyed checking out Nana's computer and her neat mouse !

Saturday morning, we went to the St.Jacobs market. ( before the storm hit there ) and got great deals on fresh food and other goodies ! A Great market if you haven't been ! I miss it ! I wish we had one like that in our area !

WE had Nana's birthday BBQ and cake on Saturday. Here is a picture of all the Marshall grandchildren.

( My brother Kirks kids )Jackson in the red shirt, is 9 and going into grade 4. He is tall like Kyler!
